Receptions

Hors d'oeuvres can be an excellent compliment to the pre-meal cocktail reception, or as elaborate and bountiful to take the place of a full meal. Select a mixture of hors d'oeuvres, keeping in mind color and texture. Provide at least an estimated one per person of each kind of hors d'oeuvre selected. Some guests will take more of one and none of something else.

Number of Hors d'oeuvres

  • Four to six hors d'oeuvres per person are ideal for a pre-meal cocktail reception.
  • Eight to twelve per person is recommended for a light hors d'oeuvre reception, especially for an evening reception that starts after the dinner hour (7: 00pm).
  • Sixteen to twenty hors d'oeuvres per person works extraordinarily well for the reception in place of a full meal.

Bar Service

Colgate Catering Services will provide "full" bar service at the Merrill House, or beer and wine bar service at Donovan's Pub, with no liquor license fees. However, bar service at any other location on campus, requires us to purchase a special NYS Liquor License.

  • The cost of filing for a liquor license is $75.00 and takes a minimum of three weeks to process.
  • Colgate University does not permit the serving of beer, wine or alcohol at the Edge Café while school is in session.
  • Catering services will not serve alcohol without a liquor license, nor are we permitted to open or serve alcohol purchased by customers.

Bartender service fee is $15.00 per hour for each bartender with a minimum of three hours. Allowing one hour for bar set up and one hour for bar breakdown. We require at least one bartender for every 75 guests attending.
